White ginger (Hedychium coronarium), also known as the white ginger lily, is a tropical perennial renowned for its fragrant white flowers and lush, glossy foliage. Native to the Himalayas, it thrives in New Zealand's warmer, temperate regions, where it can be grown in sheltered, well-drained areas. This plant adds an exotic touch to gardens, blooming from late summer to autumn, and is admired for its captivating scent.
The young rhizomes (underground stems) of White Ginger are edible and can be used in cooking, particularly in Asian cuisines. They have a mild, ginger-like flavour and are often used in soups, stir-fries, or pickled.
White ginger typically grows to a height of 1.2–1.5 meters with a spread of around 60–90 cm. It prefers moist, fertile soil and partial shade but can also tolerate full sun with adequate watering.
