Physalis philadelphica, commonly known as tomatillo, is a bushy annual bearing small green or purple fruit inside papery husks. Tart and citrusy when raw, the fruit mellows when cooked — a key ingredient in salsas, especially salsa verde.
Plants grow 90–120 cm tall and wide, needing full sun and fertile, free-draining soil. Two or more plants are required for cross-pollination and fruit set. Harvest when the husks split or fruit fills the husk fully — usually mid to late summer.
Tomatillos are native to Mexico and were domesticated before tomatoes — they were a staple of Aztec cooking and are still foundational in Mexican cuisine.
