Pizza thyme is a low-growing, aromatic perennial herb known for its rich,
savoury scent reminiscent of caraway and oregano — hence the nickname. The
dense mats of tiny, dark green leaves release a mouth-watering fragrance when
crushed, making this thyme a favourite for herb gardens, rockeries, and edible
landscapes. In late spring to early summer, it produces clusters of soft pink
to mauve flowers that draw in bees and other pollinators.
Native to the western Mediterranean, this thyme has long been used in
traditional cooking, especially in meat dishes. Its flavour, which resembles
the classic aroma of pizza herbs, makes it excellent for seasoning roasts,
vegetables, and marinades. It thrives in full sun and dry, well-drained soil,
tolerates light foot traffic, and is ideal for planting between paving stones
or as a fragrant lawn alternative in low-traffic areas.
Stays compact at around 5–10 cm high and spreads 30–40 cm across.
