Eryngium maritimum, commonly known as sea holly, is a tough, architectural perennial that thrives in coastal conditions. Its striking blue-green, spiny foliage forms a compact mound, and in summer it produces sculptural, thistle-like flower heads in shades of silvery blue to steely violet, framed by jagged bracts. These blooms are rich in nectar and highly attractive to bees and butterflies. Adapted to sandy, nutrient-poor soils and salt-laden winds, this hardy plant brings a bold, textural element to dry, exposed settings. Despite its prickly demeanour, it is a favourite of pollinators and gardeners alike, and has been traditionally used in herbal medicine and even candied as a delicacy in historical Europe. It makes a great cut flower.
