Eryngium variifolium is a striking and rather uncommon sea holly, valued as much for its beautifully marbled foliage as for its steel-blue flowers. The leathery, evergreen leaves are boldly veined in cream and silver, creating year-round interest and making this plant a standout even before it comes into bloom. In summer, branching stems carry clusters of spiny, metallic-blue flower heads that are highly attractive to bees and butterflies and add wonderful texture and contrast to the garden.
Native to the western Mediterranean, this species thrives in sunny, well-drained conditions and is remarkably tolerant of heat and dry soils once established. Its architectural form combines beautifully with grasses, silver foliage plants, and other drought-tolerant perennials. The flowers are also excellent for both fresh and dried arrangements, holding their colour and structure long after cutting.
